Creamy Chicken and Broccoli Biscuit Cups

Ok, I had plans to cook all kinds of cool stuff this week. I did, I swear. But instead of doing that I... well, I didn't. I'm still not 100% sure what happened, but whatever it was it wasn't cooking. But I wanted to post something, so here are some pictures I've been sitting on. I've made these biscuit cups a couple times before (here are the step by steps), they are a good time. I think the egg and bacon ones are my favorite (shocking, I know) but this version was also really good. It was just some chopped chicken and broccoli, a garlicky white sauce on top and a little mozzarella. If you haven't ever made these, you really should. You can fill them with anything and they're really more fun than simple finger food has any business being. Next time I make them I think I'm going to fill them with fruit. You could also use some kind of peanut butter/chocolate filling, that would be awesome. Or whatever, they're a concept, you should feel free to go nuts. So what would you put in there?

  1. These look delicious! Love the chicken and broccoli combo. Smoked cheese and ham would be good! Tuna and sweetcorn too! Will definitely be trying these!

  4. Maybe cream cheese and olive tapenade. sounds weird but i've put an olive cream cheese on my bagels before...could be interesting. I def like the chocolate and peanut butter. Of course, you could do nutella and some chopped hazelnuts.

  5. I bought a tin of Grands Biscuits the other day because I remembered somebody had done this. I looked all over the blogs I read and couldn't find it. It was you! I already just baked the Grands and we ate them, so will have to get some more!

    Fillings? Hmmmmm, Feta Cheese, Spinach and Artichoke Hearts... or maybe chopped Pepperoni and Mozzarella with a touch of Smoked Provolone... oooo oooo I know... chopped Ham, chopped Asparagus and Hollandaise ;)

  22. Props to you for the garlicky sauce on top. The chocolate and peanut butter mix is a good idea though. A little sweet dessert you can pop in your mouth.

  24. oh man...those look good! I can think of all sorts of yummy stuff to put in there...like..curry sauce with cheddar on top! chicken divan in a cup! Thanks for the inspiration!!!
