Scrambled Eggs with Salami and Peppers

Just a quick scrambled dish today, kids. I seem to remember, back in the day, going to a diner that had an "Italian omelet". It had tomatoes, basil, salami and a couple other Italian/Italian-American things in it. Now, I don't honestly know if this is a real memory or just something I thought of. I've been in a lot of diners and have often thought up things they should make and it could easily have been turned around into something I thought one of them did make.

But none of that is really important.

I had eggs and salami and decided to mix them together. It seemed like a good idea at the time. And so it was. Easy, too. I just browned up some diced salami and peppers. Then poured in some eggs and scrambled it up. I put some fresh/frozen herbs in there, too, the Italian blend. And that's that. Good times. Would have been great in a wrap, too. How about you folks, how do you like your scrambled eggs? Plain or full of stuff? If stuff, what stuff?

  1. Breakfast for dinner...that could be on the menu tonight. Gotta use up that Nature's Pride bread anyways, so why not a little egg sammie. :)

  2. I'm am so totally into scrambles...whenever I go to a breakfast place that serves omelets I ask if they'll make it into a scramble instead...YUM!!

  3. Oh, so yummy! I put all sorts of stuff in scrambled eggs and omelets - cheese (cheddar, ricotta, mozzarella), green onions, bacon, lap cheong (Chinese pork sausage).

  4. I usually like some chopped ham in my scrambled egg or shredded cheese. I've got a craving for eggs all of the sudden.

  7. mm...looks good. I like mine plain, sometimes with cheese, and on a toasted english muffin. My daughter likes them all fancy with mushrooms, peppers, onion, garlic, avocado and tomatoes.

    breakfast places don't always oblige...I'd say my success rate is about 50/50...

    in the bay area when I lived there scrambles are on most breakfast menus...but elsewhere, they sometimes look at you like you're crazy...

  13. I like my scrambled eggs with nothing except ketchup! I don't mind peas once in a while, but for some reason I don't like it with chopped ham. It's ok if the ham is outside of the egg in a sandwich though... I'm so weird!

  15. Your right this would be great in a wrap or even pita (no mess) and I'm pretty sure all three of the kids would enjoy this!

  20. I used to eat those for breakfast (very often also for the dinner) with Congee...well, not exactly the same, I think it was with Cantonese sausages....

  22. On Sundays, my mom used to dice up leftover baked potatoes ('cuz Sat was steak and tater day) throw in some sliced smoked sausage, onion and brown all that and pour in the eggs. Top with cheese. OMG, I've made myself hungry! LOL
