Grape and Rosemary Focaccia
Just a quickie today kids, something I saw over at Noble Pig and had to make for my girlfriend since she loves grapes. I made a few minor changes, mostly due to stuff I didn't have. Like Romano, so I used a little mozzarella. It's really not the same, but it gave the focaccia some of that crispy, browned cheese texture. Plus I didn't have fresh rosemary, so I made a quick infused oil to use instead. I figured dried wouldn't work, too crunchy. It came out well, my girlfriend loved it. Turns out I'm not a big fan of roasted grapes, but you don't know until you try, right? Heh. So, looking for a different focaccia and like roasted grapes? Give this a shot.
I love focaccia! But not so sure on the grapes too. Maybe I'll substitute with raisins? Those are grapes too, no?

ReplyDeleteI can't say that I've ever had roasted grapes...maybe substitute for some...roasted sweet potato! yum.
ReplyDeleteI wouldn't be a fan of the grapes either, but you can't go wrong with a good focaccia base.

ReplyDeleteI might try this with olives instead. Or grape tomatoes. Even though the grape thing might be weird, the rest of it looks super tasty. I have had an itch to make focaccia lately too!

ReplyDeleteInteresting. I tried a grape cake awhile back and had a similar experience. Hot grapes are weird. But, you gave it a try!

ReplyDeleteI never had roasted grapes! I guess I could pick them off if it turned out I didn't like them. I really love focaccia! This is unique.
ReplyDeleteSaw this on Cathy's site and recently saw an episode of Iron Chef that featured grapes (and one of the chefs roasted a batch). They sound super sweet and great for a savory recipe. Love that you tried it!

ReplyDeleteJeannie: They're dried grapes, yeah. But I think they might dry out too much in the oven. Although you could fold them into the dough...

Barbara: I also really like sweet and savory, which is why I thought I would like this. I think it was mostly the texture of the grapes that got me, the bread itself was quite good.

ReplyDeletefoccacia, yes. hot, busted grapes, no. i don't think i'd like this a whole lot, but who knows--the little sweetness of the grapes might make a world of difference for me. and hey--atta boy, making some infused oil in lieu of fresh rosemary. i'm impressed. :)
