Black Truffle Oil

A while ago Joanne over at Eats Well With Others and Marx Food got together and had a caption contest. I didn't win, but I was a runner up! It was a fun contest and my fabulous prize was a bottle of truffle oil. It's very exciting for me, since I've never used it before, but frankly I have no idea what to do with it. So how about some advice kids? What should I do with black truffle oil?

  1. Ooo...I want some truffle oil!!! it good with pastas. Something with mushrooms, too.

  2. Drizzle a little over some nice risotto con prosciutto, for one. I am not in fact a fan of truffles, but used as an accent, this stuff brings a certain richness which cannot be denied.

You can also add a tiny bit to any rich pan sauce to bring out another level of complexity.

  4. Wonderful prize! If I had black truffle oil right now, because I have defrosted bison for tonight's dinner, I would do a dish we affectionately named "buffalo truffalo", basically bison with creamy truffle mushroom sauce :)

  5. put it on some soft scrambled eggs for starters - kick up your popcorn, mix it in some butter and put it on steak, its great on pizza, pasta, risotto, remember to always add it right before serving

  7. I like what Leslie said...lobster with mac and cheese. Oh man...now that's all I'm thinking about!

  8. Make stuffed portobello mushrooms with a bread crumb/parmesan mixture, when done drizzle with parsley and black truffle oil ;)

  9. I would go with the Risotto con Prosciutto. Kick up Spaghetti alla Carbonara, Linguine alla Papalina or Fettucine al'Alfredo.

Black truffle becomes more flavorful when exposed to heat. As opposed to the White truffle, which degrades when exposed to heat. So don't be afraid to get it warm.

  10. I would drizzle a little on some pizza. I've tried white truffle oil, but never black. It sound yummy!

  11. @Leslie:

Bleh. Sea bugs. Bob and I think not. (insert smirk and chuckle which indicate good humor here)

Now, make your mac and cheese with chorizo, and maybe we can talk...

  15. I've put truffle oil in a cheese bread before and it turned out quite marvelously. Other than that, a simple salad of thinly sliced ribbons of zucchini with some shaved Parmesan and pine nuts is great with a drizzle of truffle oil over top.
