This is another one where I'm not really going to bother listing the ingredients. It's not something original or inventive, just really, really good. The funny thing about these is, I almost never make them for breakfast. Go figure. I like them best with biscuits, but bagels or croissants or even just toast are also wicked good. Whatever you use you want to make sure it's thick and not some crappy store bought white bread or else it's not going to stand up to the sloppy deliciousness. At least, not if you make them like me. Heh.
First things first, biscuits. Yes, these are from a tube. My girlfriend bought one, so I had to use it. But if I hadn't had that I would have made some. Then I browned some bacon. I love bacon, but I'm not really a huge breakfast sausage fan. Not that I'll turn my nose up at it, mind you. Aren't you glad you know that about me? Next comes eggs, sunny side up. I like my yolk runny, thank you. I'm just not afraid of the consequences. I'm a madman, I know. This is why I like sunny side up eggs for these, I put it on the biscuit, then break the yolk and spread it around like some kind of rich, eggy sauce. This is why you can't use thin white bread for these things. It just won't be able to handle this. Now, bacon. You need to make your sandwiches pretty quickly after the bacon is done. I've noticed that bacon has a tendency to evaporate whenever I turn my back. I don't know the exact physical attribute it has that makes it do this, but it seems to happen in direct proportion to the number of people in the house. More experiments are clearly needed. I sauteed some onion in the bacon pan at the last minute, didn't get a picture of it though. But here it is. You could put some cheese on now, but I didn't have any worth using. If I had I probably would have put it on first, then the hot egg would have melted it. Anyway, there it is. A breakfast sandwich, the way I make it.

ReplyDeleteMMMMMMMMMMM! I love my eggs just like yours. Sometimes I overcook it and then I get bummed. Yours looks perfect. I love onions with my eggs, too. That's an awesome sandwich to start your day with.

I love runny yolks, too, and I even let my kids eat raw cookie dough. I mean, come on!! Besides, like Emily said when I told her they could eat the stale gingerbread men off the tree after Christmas, "Awww, you're such a good mom! Because you know that with modern medicine, if we get food poisoning from eating old cookies, we won't have to suffer very long." Ha! But seriously, do you KNOW anyone who ever got food poisoning from the raw eggs in cookie dough?
ReplyDeleteEggs and onions are a beautiful thing. Especially when all of them are dressed with bacon grease. Sadly, my doctor says I have to lay off the bacon (blood pressure, you know), but I am not sure how long I want to live without bacon...
ReplyDeleteWell, Debbie, having worked as long as I did in medicine I believe I can say that yes, I do know of a person or two who became ill eating undercooked eggs (I don't think it was cookie dough -- if my memory serves it was actually soft boiled eggs, but the principle is the same). Mind you, they were on immunosuppressants for an organ transplant if I recall correctly, but there you go...

ReplyDeleteBreakfast is the best meal to eat. I am one of the people you will find at the breakfast buffet with 10 slices of bacon on her plate.
