I'm on a real Mexican kick, apparently. I've had the tamales, the Mexicanized shakshuka, that burrito wrap thing and the green chili enchiladas all within the past couple weeks. And that's just the stuff I've posted, I've made a couple things that I didn't get pictures of. Hope you're all not sick of it, we've got one more to go.
Enchiladas have an awesome stew-like kind of vibe in that you can use them to finish off all kinds of leftovers. When I made these I had a chunk of steak leftover from fajitas, two tortillas and some leftover rice pilaf so I figured I'd just whip something up with those. So I took those, some chunks of cheese, diced red onion, green chilies, some Mexican seasonings and mixed them up. Noodles was curious about what I was doing when I brought the bowl of filling over to the window for better light, but none of it was for her. Heh. I made a quick enchilada sauce with an eight ounce can of tomato sauce (I love those things), garlic, onion and some adobo seasoning and spread a bit on the bottom of a little casserole dish I have. Then I filled the tortillas up with lots of filling (no point in screwing around), rolled them up and dropped them in. The rest of the sauce on top, a goodly amount of cheese, some time in the oven and that's that. It came out pretty good, but the sauce needs a little work so I don't feel too bad about not having a recipe. I actually have been looking for a good red enchilada sauce, anyone have one they especially like and want to share?

Yummy! Great meal for Cinco de Maya!
This is an oldie, but goodie Enchilada Sauce from Cooking Light in the 90s (might need a little more salt to taste): http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=614044
Hope that helps!
I just remembered we had a new enchilada sauce on our site, too: http://www.cabotcheese.coop/pages/recipes/recipe.php?id=478
Hope one of these works for ya!
Cheesy rolls! I love them, well, who doesn't??!!
MM Love Mexican food!
Looks awesome. I'm not tired of your Mexican food kick! And I could never get tired of enchiladas. Love em.
Looks incredibly delicious! Yummy!
Yum! Looks pretty good for something so easy, well the way you described it is easy though I suspect there's quite some dicing and chopping to be done! I have the same habbit of just throwing whatever's available and make a meal out of it!
Those look really good! My friend's mom always made cottage cheese enchiladas and they were oddly delicious!
Buy a can of enchilada sauce! LOL I haven't made enchiladas in a while -- I love turkey in them.
That looks divine! All melted cheese. Yum.
I dont think I could ever get sick of Mexican!
Ooooh, I do love a good enchilada! I just use salsa for mine, though, or a store bought enchilada sauce. Sacrilege, I know!
I'm going to have to predict that your subconscious has been infiltrated by the ghost of Cinco de Mayos past. Which is not a bad thing...
These look so cheesy and delicious! Love it.
Looks awesome but you only made two?? What did the girlfriend eat? I know I wouldn't share. lol
I'm lazy. I buy the Juanita brand canned enchilada sauce. Not the best but it works.
We love Mexican cuisine too. I'm even making it tonight. My husband's favorite is enchiladas and I love your idea of making them with leftover bits.
Enchiladas goodness with come classic fillings. Yum!!!!! I use tomato sauce for the sauce, too.
Wow, I love that you put rice in enchiladas. It's like burrito enchiladas! Yum!
HA! my cat does that too! he's like why are you carrying this plate of food over to the window all the time? LOLOL!! looks good though.
Looks yummy!!
You must be all ready for Cinco de Mayo. Steak sounds like a winner.
How awesome! Last night I made shrimp and rice enchiladas...we must have been on the same wavelength. Yours look and sound delicious.
Yum!Cinco de Mayo food! I love all Mexican food. My mom made enchiladas at least once a week when I was a kid. Tonight I made quesadillas.
Absolutely nothing wrong with being on a real Mexican kick, especially since we get a virtual taste of it, too! Now, I'm really in the mood for something special for Cinco de Mayo . . .
I love tomatoes and cheese, this is the perfect wrap. I can have it any time of the day.
I'd certainly love to prepare Mexican food more often, but my husband won't let me. These enchiladas look and sound gorgeous.
I love enchiladas but don't make them often because Grumpy won't eat them without griping!
I have an awesome red enchilada sauce that I blogged a long time ago. Its the only recipe I ever use when I make them! http://www.grumpyshoneybunch.com/2008/06/you-sweet-talkerhoneyb.html
I'm afraid I'm going to be no help with sauce ideas, but I can definitely say that the enchiladas look fabulous! Perfect easy dinner :)
Gosh, I miss these cheesy rolls!
yum.....enchiladas never looked so easy!!
This is so good! Great dish! Noodles is a little nosy like mine, did he get a bite?
