Strawberry Pecan Banana Bread

Just a quickie today, kids. Banana bread is one of those things that just kind of happens. We never plan on it, it's just that sometimes we happen to have three overripe bananas and that means it time. Time for banana bread. This is the thing my girlfriend bakes and this is the recipe she always uses. This time when we had bananas that were ready for bread we also had some strawberries and pecans that wanted using as well, so she tossed them in. It came out wicked good. The big chunks of strawberry and toasted pecan added great sweetness and texture to it.

When she cut up the berries she let them sit for a minute and then drained off some of the juice, so the bread wouldn't get gummy. Other than that she just followed the recipe, adding in about a cup of strawberries, cut into bite sized pieces, and a half cup of toasted, chopped pecans. I liked it even more than the chocolate chip one. So what's your favorite add in to banana bread?

I really want to try adding strawberries to my banana bread next time. Hopefully the bananas won't be eaten before they get ripe enough. My favourite add ins are chocolate chips.

I can take or leave banana bread, but the strawberries sound like it'd be a good addition to it.

I was always dubious of strawberries in baked goods like quick breads, muffins and cookies since many recipes call for dried berries, which I don't find particularly tasty. But your GF's tip of draining them first to avoid smooshiness is great. This loaf looks so incredibly good!

The strawberries are a nice add. We love chocolate, Frangelico or Amaretto, walnuts, pecans or hazelnuts or sometimes little bits of caramel. A couple combinations of any of those is perfect.

Awesome variation!!! I love Banana bread... Especially warm with a big ole smear of butter. My favorite addition is toasted Walnuts... It balances out the sweetness a little. :)

I love strawberries with banana! This looks moist and yummy. I like white chocolate chips in mine, and coconut!

I usually just add pecans. But oooh man....ok check this out!! My favorite combo is bananas, strawberries and chocolate (mmmm, banana split)...so what if we combined girlichef's chocolate banana bread with your strawberry pecan banana bread! Oh yaaaaa! Where are my brown bananas when I need them?!!!

Never thought of strawberries...I like to add cinnamon and sometimes instant espresso.
