I keep it on the counter top, right near the stove. I don't use it much as I should , but when I do it's doesn't cause any issue's. I refrigerate it until chilled, scoop it out in tbs onto a tray to freeze, then put the balls in a bag and freeze. I always tend to burn or unevenly cook the bacon when I cook it on the stove top.
